Maple mustard sweet potatoes

This is pretty much the tastiest and easiest side ever. Sweet and salty and sticky sweet potatoes. Make sure you taste your sauce mixture before you put it on the sweet potatoes and adjust the flavours to your taste (I tend towards the very sweet or very salty side in almost everything).

Serves 12 as a side

6 medium sweet potatoes, cut into chunky chip size.

6 cloves of garlic, smashed

1/2 cup of soy sauce

1/2 cup of maple syrup 

Good splash of olive oil

2 heaped table spoons of mustard 

Whisk all the ingredients together to make a sauce and pour it over the sweet potatoes, making sure they're all covered. Bake for 20-30 minutes or until soft and sticky.

If you have a really shit oven like me you'll have to mix the sweet potatoes around in the tray every ten minutes or so to make sure they're all cooked through and not crunchy.
